Harvest

Manual harvest in small capacity boxes, sorting at picking and in the cellar.

Terroir

Clay-sandy limestone terroir, very stony, favoring fresh, taut and mineral whites.

Our high-altitude Chardonnay, grown in the limestone foothills of Ventoux, blends subtly with our traditional grape varieties grown on clay-sandy soils. This blend of grape varieties and terroirs brings uniqueness, richness and elegance to our wine.

Vinification & aging

Low intensity pneumatic pressing. Natural fermentations (native yeasts) at low temperature in demi-muids of 2 to 3 wines. Aged for 9 months in demi-muids. End of aging in stainless steel vats to preserve freshness and promote the expression of the fruit.
